My husband loves this dish! The other day we were talking about some of our favorite dishes. I asked him what we haven’t had for dinner for a while that he would like me to make, and this topped the list. The first time I made this version of pepper steak it was just one of those recipes that comes out of nowhere. Sauté some steak, onions and peppers, throw in a few simple ingredients and a delicious dinner was created.
This is a great weeknight meal. It doesn’t require many ingredients, they are pantry items in my house, and it comes together rather quickly. Oh, and it’s super yummy.
There are so many variations of pepper steak out there, but I like the simplicity of this one. No one ingredient over powers any other, it all just works.
This time around I used a sirloin, but if you don’t have it or it didn’t look good at the grocery store, because we all know sometimes the meat isn’t as pretty as it should be, then just use your favorite type of steak-like looking hunk of beef.
You start by slicing the beef into thin strips and sauté them in your favorite oil until they are just browned. Remove the steak from the pan, and toss in the sliced peppers and onions. Let those soften for a few minutes and add the garlic. Sauté for another minute or two.
Stir in the chicken stock, soy sauce, sugar and diced tomatoes. Add meat back in and simmer for 10-15 minutes. Serve over rice.
- 1 pound sirloin steak, thinly sliced
- 1 large onion, sliced
- 2 large bell peppers, sliced
- 4 gloves garlic, minced or grated
- 1 cup chicken stock
- 1 14.5 oz. can diced or petite cut tomatoes
- 3 tbsp. soy sauce
- 1 tsp. sugar
- Salt and pepper to taste
- Sauté the sirloin in oil, over medium high heat until just browned. Remove from pan.
- Add in the sliced pepper and onions and sauté until softened, about 7-10 minutes.
- Add in the garlic and sauté for another 2 minutes.
- Stir in the chicken stock, canned tomatoes, soy sauce and sugar.
- Add the sirloin back into the pan and let simmer for 10-15 minutes.
- Season with salt and pepper to taste.
- Serve over rice.
