Lemon Blueberry Oat Smoothie

Some of you may think that lemon and blueberry do not sound good together, but let me just tell you they are a delicious combination.  Try this smoothie and then you’ll believe me.

This a great healthy breakfast or lunch option and it keeps you full for several hours.  I love enjoying this after the elliptical just kicked my you know what!  It’s packed with protein from the greek yogurt and my oh my is it delicious!

Any who, back to the blueberries.  You can use fresh or frozen to make this delicious smoothie.  Fresh will result in a not so cold and much lighter in color smoothie. 

Frozen will give you a much more vibrant colored smoothie, but either will work.  I’ve made both.

Lemon Blueberry Oat Smoothie

When I make this smoothie I always use almond milk but you can use just plain old regular milk too.  I prefer to use vanilla greek yogurt because I don’t really like plain greek yogurt unless I’m baking with it.  You can use either quick or old-fashioned oats.  I always use old-fashioned because that is what I keep stocked in my pantry.

Before you start making this you are going to want to soak the oats in the milk for about half hour.  This step just allows the oats to blend into the smoothie better.  You don’t have to do this step but I think it makes for a smoother smoothie.  After the half hour is up you just toss everything into the blender and blend away.

I think this smoothie is so delicious and the lemon adds a great freshness that you really can’t get from anything else.

Ingredients
  1. 1/4 cup oats, quick or old-fashioned
  2. 1/2 cup almond milk
  3. 1/2 cup Greek yogurt
  4. 1 cup blueberries
  5. 1+ tsp lemon zest
Instructions
  1. Soak the oats in the almond milk for about half hour before making the smoothie.
  2. After the half hour place all the ingredients into a blender and blend until smooth.
Notes
  1. If the smoothie is a little to thick just splash in a little more milk.
  2. Start with one teaspoon of lemon zest, add more for a bigger burst of lemon flavor.
