Do all of you enjoy cooking with quinoa as much as I do? I know it’s been around pretty much forever. If you haven’t tried it I encourage you to. It’s so yummy, and it’ll take on every flavor you throw at it. Not to mention the health benefits.
It’s so easy to prepare. All you need to do is put it in a pot with a liquid and let it simmer until the quinoa has absorbed all the liquid and is tender. Just follow the package instructions, but that’s pretty much it. My little guy loves quinoa. I love that he loves it too. I just don’t love the part that involves me trying to clean the quinoa off the floor that he “dropped” or thrown as is the case most days in my house. Not easy to get off the floor.
Any way, this quinoa lunch bowl is so good and fresh and comes together in a matter of minutes. This is a wonderful lunch or dinner option for that matter when you don’t have much time to prepare a big meal. You’ll feel good knowing that you’ve chosen a healthy quick option.
All you need for this quinoa lunch bowl is:
quinoa (any variety you like) – water – cumin – frozen corn – black beans – salsa – salt – pepper – cheese (optional) – sour cream (optional) – pickled jalapenos (optional) – pickled jalapeno juice (optional)
All you need to do is prepare the quinoa according to the package directions, with the addition of a little bit of cumin added into the pot to infuse the quinoa. Once the quinoa is done, I like to keep the pot over low heat and add in the black beans and defrosted frozen corn. I cook that just long enough to warm everything through. This dish doesn’t need to be served hot.
Once that is warmed up, I stir in my salsa, jalapenos, jalapeno juice, check the seasoning for salt and pepper and serve it up. I like to top mine with a little shredded cheddar and a dollop of sour cream.
Adding any leftover meat from yesterdays dinner would be great too.

- 1/3 cup quinoa
- 1 tsp. cumin
- 1/4 cup frozen corn, defrosted
- 1/4 cup black beans
- 1/4 cup salsa
- 1 tbsp. pickled jalapeno juice - optional
- picked jalapenos - optional
- cheddar cheese - optional
- sour cream - optional
- Cook quinoa according to package directions, add the cumin to the pot with the quinoa and water.
- Once the quinoa is done, turn the heat to low and add in the corn and black beans. Let that cook until everything is just barely warm.
- Stir in the salsa, jalapenos and jalapeno juice.
- Serve with cheese and sour cream.
