Banana Cupcakes with a Nutella Buttercream

My sister is the inspiration behind these wonderfully moist and super delicious Banana Cupcakes with a Nutella Buttercream.  We were talking to each other on the phone and she told me that I should come up with a dessert that had bananas and Nutella.  Challenge accepted!

I figured that since she’s my personal home designer/decorator I could come up with something uber delicious and send her home with some!  

That girl gets more pictures texted to her about design and decorating from yours truly than actual words.  It’s so true.  I think I sent her 15 pictures the other day when I was at the fabric store.  No joke!  Just a picture and a question mark.  😁  What can I say?  She designs and I bake!

Back on track!

These cupcakes came out so perfect and everyone loved them!  They are so moist and so full of flavor.  Anything with a Nutella buttercream is guaranteed to be taken over the top!  For the record, adding Nutella to buttercream makes buttercream so much better.  Just sayin’!

This Nutella buttercream is so light and fluffy and is just whipped to perfection and I just love it!  I can talk about it all day.  I need to have an aresenal of recipes that need this Nutella buttercream. It’s that good!  Or I can just eat it with a spoon……!

There isn’t anything fancy about these cupcakes.  Your usual suspects are present. It’s your normal cupcake making process.  Fill the cupcakes liners 3/4 full.  Cupcakes are done when a toothpick inserted comes out clean.  Let them cool before frosting.  Please please please let them cool completely before you frost the cupcakes.  They are tempting, I know, but you don’t want to frost a warm cupcake and have all that perfect Nutella buttercream slide down the cupcake.  It’s not pretty, believe me.

Banana Cupcakes with a Nutella Buttercream

For the cupcakes
  1. 1/2 cup unsalted butter, softened
  2. 1 cup brown sugar
  3. 1/4 cup granulated sugar
  4. 1 tbsp. vanilla extract
  5. 3 eggs
  6. 1-1/2 cups mashed banana
  7. 2 cups all-purpose flour
  8. 1 tsp. baking soda
  9. 1/2 tsp. salt
  10. 1/2 cup buttermilk
For the frosting
  1. 1/2 cup unsalted butter, softened
  2. 1/2 cup Nutella
  3. 1 tsp. vanilla extract
  4. 2-3 cups powdered sugar
  5. 2-3 tbsp. milk
For the cupcakes
  1. Preheat oven to 350F.
  2. Line 2 standard muffins tins with liners.
  3. Combine flour, baking soda, and salt in a medium bowl and set aside.
  4. In a large bowl with an electric mixer cream together the butter, brown sugar, and granulated sugar.
  5. Add in the vanilla extract and eggs, beat until well combined.
  6. Add in the mashed bananas and stir on low.
  7. With the mixer on low alternate adding the dry ingredients and the buttermilk, ending with the dry ingredients. Mix until just barely combined.
  8. Fill the cupcake liners 3/4 full and bake them in the preheated oven for 15-20 minutes, rotating half way thru to ensure even baking. Cupcakes are done when a toothpick inserted in the center comes out clean.
  9. Let cool completely before frosting.
To make the frosting
  1. With an electric mixer, beat together the softened butter and Nutella. Add the vanailla extract and powdered suagr 1/2 cup at a time. For a sweeter frosting add more than 2 cups 1/4 cup at a time until desired sweetness. Add milk to reach desired consistency.
  2. Frost and enjoy!
